Did you get to see them actually chop up some of the meat? Or the head? When I visited Nan, Thailand, they had a market very similar to this one it seems. They had heads of swine as well. But they actually pieced it apart on the table for those who only wanted one piece or another. Gives a whole new meaning to pork chop.

There were some stalls where they were butchering the meat live, but at this one the work was already done.
